Ways to use kimchi.

I love kimchi. I use it in Asian tacos a lot , on sandwiches , etc. I’m curious about using it has an ingredient in other stuff. I often make a kimchee mayonnaise which we love on sandwiches . I’ve expiermented with a few kimchee salad dressings as well. How have you guys incorporated kimchee into your cooking? Cheers.

I like to eat it straight out of the jar, among other things. I’m gonna try to make some at some point.

It’s great on a pulled pork sandwich. In place of the slaw. Or I use it as a pickle ingredient.

I love the stuff, I got some reluctant people to love it too by calling it Cajun sauerkraut. My wife hates the smell of it, so I usually just eat it out of the jar when she's not around.
I home make everything from pickles to bread, cure my own hams, stuff sausage, but I can't seem to get the hang of making good kimchi.
Where do you buy your favorite? I usually get it from the Asian market on College near Highland, but it is very inconsistent.

I eat it out the jar, cook it in fried rice with bacon, eggs and peas, use it to jazz up cheap ramen, make this Korean army stew LINK

Pre-cook 2 cups rice
saute 1 chopped onion & 4 thinly sliced garlic pods
Drain 2 16 oz jars of kimchi liquid and save (I usually get about 1 1 /2 cups of liquid)
add kimchi to onions and saute for 2-3 minutes ( I usually leave the kimchi unchopped but you can chop it to smaller pieces if you like)
add pre cooked rice and sautee 5 minutes
add kimchi liquid and cook 5 minutes
I usually roast some Brussels sprouts with a thia chili sauce and put this on top of the rice with some cooked shrimp. And then at serving add a liberal amount of fresh basil and mint from my garden and some very thinly sliced onion and jalapeno.

Whole foods has a kimchi siracha thick sauce. I put that shite on everything now. Basically just blended kimchi. No sugar.

There’s a place near me that serves this and it’s really good but you have to eat it fast before the kimchi starts to make the fries turn soggy.
Also recommend tying up a plastic bag around your container of kimchi to reduce the smell. The Korean supermarket I get my kimchi from does this and it helps a ton.
