Watched an old man make bacon one time..I want his technique

He just dumped the whole package in a pile in a skillet and just swished it around stirring the crap out of it while it was cooking.
After a bit, he just put something heavy on top to stretch it out and made nice flat bacon strips that were perfect.
I am sure this won't work for me so before I even try it does anyone know how this works? Is there some magic to it that I'm leaving out? It seemed like a really fast way to make perfect bacon.

On a baking rack in the oven

If you render the fat, the bacon will shrink obviously.
He must have rearrange the strips once rendered then put a flat press on them to finish cooking.
Not a bad strategy, just cant use too high heat to fully cook the bacon before the fat renders.

thats how we usually do it but honestly i dont like that as much as bacon from a skillet. i think i'm just burned out on the dry oven bacon and more often than not, i'm the one stuck cleaning the pan with steel wool.

bacon is always perfect whether straight or curled up. It is god's gift to humanity.

Or parchment paper, dummy.

And if you like bacon rendered in it's own fat, like in a pan, lose the rack and just cook it in a foil lined pan in the oven. Still cooks up flat.

If I've got to cook a pound or more of bacon, I use the oven (sheet pan lined w/parchment).
For a few strips for breakfast, microwave on a paper towel in a pyrex dish. It's too damn easy, faster than stove or oven, and a heckuva lot easier to clean up. An oblong pyrex dish will hold six strips, enough bacon for two.

Wtf? Put foil down like a normal person.

Thick cut bacon on a big sheet in the oven is the way to go. Bonus is to dump the bacon grease in your browned hot sausage meat to make white gravy for your biscuits with a little whole milk and flour.
You ain't doing it right

Baking on a wire rack inside a foil lined baking sheet is good for making crispy bacon. Cooking it flat on the foil lined baking sheet makes for a juicier bacon.

The secret to good oven bacon is putting it in a cold oven then setting temp at 400.

thats our problem; we only have one of these and the bacon debris sticks to everything and makes a huge mess. sounds like i need to buy the wife a better oven pan

During your entire kitchen remodel you didn't purchase or otherwise acquire a single half sheet pan?

Line it with foil dummy. If you don't want to use foil spray your pan with Pam. It will make cleanup easier. I wonder how some of you made it this far without the internet.
