Twice fried fries, anybody doing this?

Found this out recently. Fresh cut fries were usually soft and soggy after frying, but no more. Put them back in the grease and refry for 30seconds or a minute and crispy tasty fries.

Always. No other way to do it from fresh potatoes and not make them soggy.
Cut them into really thick British style "chips", par boil them for 5 minutes, then use the same double fry method. Fantastic.

Chill them between frying sessions if you have time.

Agreed on chilling... And rinse in a bowl of water before the first fry. Change water out a couple of times. Then dry them on a rack and or blot with paper towels.

however there is another way it just requires a deft hand at the grease and a little more time. Lower your temp to 300 and fry for about 40 minutes. You get the same result but you have to work the bottle to hold at 300 (no lower)

You have to par fry fresh fries at 325 then fry them again at 375. Or start them in cold oil.

Cut and soak in the refrigerator over night is also an option. Pulled the starch out to make a crispier fry.

Wash the starch out till clean water, dry with paper towels, coat lightly with vinegar, back in fridge all night, double fry next day. Really good fries.

McDonald’s does. Mother, however, fries once giving the potatoes a natural and mushy texture. I dislike crisp fries, including the dagger like chip fries that do not deserve to share the same plate with long, soft potato cuboids. McDonald’s brainwashed an entire generation into believing crisp fries are superior to soft fries.

I know I’m in the minority, but I love a “soggy” fry made from red potatoes.
