Tuna of Choice

For our diehard Catholics that feast upon fish on Friday and don’t have access to Louisiana seafood, what is your preferred tuna of choice: vacuum sealed bag or traditional can?

The nice thing about the bags are the many different flavor choices, but you lose about 2 ounces. A traditional tuna can is 5 ounces while the bags run about 3-3.5 ounces. The nice thing about the bag is the way less water in them.

Either Ortiz in a can packed with olive oil, or the solid packed Wild Planet in a can. Wild Planet is a single solid piece of fish, virtually no liquid in the can.

Anything that is solid white in EVOO will be good. I like Sunkist and Bumble Bee.

Chunk light in water.

Find albacore to be dry and the mercury level in them is elevated.
