Smoked Turkey or Chicken salad (dark and white meat)
Egg salad
Tuna salad (prepack tuna sucks, all varities). Left over grilled med rare Tuna steak chopped up for salad the next day is best. The white tuna(albacore) is a solid entry here off the grill too! I don't live close enough to the coast to get fresh tuna much so I muscle down the nasty canned/pouch variety a couple times a week to get the ol' HDL up.
A good pimento cheese is above all of these for me, love it. How is ham salad not in this list?

Sounds like a major understatement.
I've been subbing in tinned salmon, trout and other fishes for tuna. Nice change up.
