Trying to make Boudin.......

I can't find pork liver in my area (Jackson, MS). Was told that chicken liver could be used but haven't found that either. Seems everybody has calf liver but I don't think that would work (I could be wrong). Tried the local major groceries to include calling the Mexican and Orientale groceries. I think the Orientale grocery said they were sold out for the week but it was hard to actually understand him. My Uncle told me to look in the frozen section as he had found frozen pork liver next to the Chitterlings but nothing there either.

I know many of you make boudin and have posted about it. Where do you get your pork liver?

I subbed frozen calf liver for pork liver one time and didn’t particularly care for it. I would use chicken liver if you can’t find pork. I can’t believe you can’t find chicken liver in a grocery store. It’s very common .

You can’t find chicken livers around Jackson Mississippi? The last couple of days people on here have posted about having to buy all their beef online and now not being able to buy chicken livers? I guess I am really lucky to live in Alabama and be able to buy quality local grown meat within 10 miles of my house.

Search for a local slaughterhouse or meat market. Otherwise use chicken liver

Liver is usually in the frozen meat section. It's not usually packaged as fresh. Hope this helps.

I have a very hard time believing you can’t find liver in Jackson Mississippi

Chicken liver is usually found in 1 lb. containers in the frozen food area of local stores in my area. Ask the butchers if you can't find them and they will show you where they are, if they handle them.

I would have thought it would be easy to find chicken liver as well with all the chicken farms around. Maybe I need to try out of the way groceries because all the ones I normally go to said all they had was calf. Granted I did not try an actual butcher shop.

Forgot about them. Going to Hazlehurst tomorrow; I'll run by there if they are still open. Thought I heard earlier this year that Mr. Wilson passed and with Covid they may have shut down. I'll report back if they are still open and if they have pork liver for sale.

I use chicken livers when I make boudin. the flavor is a little more mild and they are easier to work with if you're making smaller batches

I prefer chicken liver in mine. I almost guarantee if you have a Super 1 or Piggly Willy, that you will find chicken liver.

Jack Wilson passed away several years back. Haven't been in a while, but last time they were wall to wall.
