What’s the yield of the recipie relative to the size of the 5 Gal Pot? (How Full will Pot be if recipe is followed exactly?)

10lbs of meat cut stew size. (Alligator, Venison or Turtle)
2 lbs Smoked Hot Sausage or Andoulle diced.
9 Yellow Onions chopped.
4 Bell Peppers chopped.
1 Bunch Celery chopped.
9 Cloves Garlic chopped.
2 Bunches Green Onion chopped.
1 box Fresh Mushrooms sliced.
2 lbs. Real Salted Butter.
4 Cans Rotel.
Four 6 oz. Cans Tomato Paste.
Two 6 oz. Cans Tomato Sauce.
4 Cups Burgundy.
1/2 Cup Lea & Perrins.
2 tsp. Sugar.
1 Cup Oil.
1 Cup Flour.
1 Gallon Water.
5 Gallon Black Iron Pot.
1 Black Iron Skillet.
1) Brown seasoned meat, in melted Butter, in Pot. 2) Brown Sausage in Skillet at same time. 3) Remove Meat and Saute Onions, Bell Pepper, Celery, Garlic & 3/4 of the Green Onions. Save 1/4 of Green Onion for Garnish. 4) Remove Sausage when browned. Add Oil to Pork Fat from Sausage. Add Flour and brown to make a dark Roux. Add 1/4 Cup of Lea & Perrins when you turn off heat and blend. 5) Add Tomato Sauce, Paste, Rotel and Sugar to Sauted Veggies. Cook until blended well then add Roux. Cook untill blended well again. 6) Add Burgundy, 1/4 Cup of Lea & Perrins and 1/2 Gallon of Water. Bring back to boil. 7) Add Meat and Sausage back to Pot. Add Water if needed, enough to cover meat good. Bring Back to boil, reduce heat and start spooning off excess grease. Stir often and deep to keep from sticking. 8) Season generously and cook slow for 3 hours. Continue to spoon off grease and stir. Add Water and Seasoning as needed. 9) Add Mushrooms and cook 1 more hour. Garnish with Green Onions, serve over Rice and with French Bread. The recipe is big but still great when reduced. Just don't hurry it. This is the real deal!!!!!!!!!!

Hey there, just saw your question. Typically your pot will be about 1/2 to 3/4 full, but if you add more meat than called for (it happens to me a lot) or if you add a bit more water for adjustment, it will obviously be a bit fuller. I usually always end up at least 3/4 full.

Over the years I have kinda tweeked the way I cook this recipe. I started browning my sausage first in main pot, removing, then adding only part of the butter for browning other meats. I didn't like how much liquid was in the pot and it boiled the meat more than browning it. Man, the magic of real butter & roux combined with Burgundy is amazing.

Yes, go to a 12 Qt pot and cut recipe in half.

I made this for the first time this past weekend and I just kind of winged it. Turned out fantastic. I used alligator and savoies sausage. I'm not much of the measuring type. Just go for it and it will all work out.

Tree... your recipe took down a Cookoff in Thibodaux on Friday evening. I did some modifications.. Chicken stock in place of water, Little more rotel, little more wine, etc.
It was a wide open variety Cookoff, 15 cooking teams in all. People were doing stuff like Crawfish Crepes and seafood Nachos, etc, but Chicken and Sausage Sauce Picante based off your recipe took first place. Thought you’d get a kick out of that.

One of my all time favorites. I don't know that I ever missed his posts. Seeing him post was sort of like a treat because it wasn't regular. I would click on his name sometimes, to make sure I hadn't missed anything.

Tree, I'm in Kentucky now and there's no alligator, turtle, or venison available to me around here. Any recommendations on another meat to use for those of us far from Cajun country?

I used boneless skinless chicken thighs on Friday night and won a Cookoff. I spoke with one of the judges after. They weren’t given any information about what they were being served before hand, and two of them speculated that it was turtle meat.
