I made beef stew in the Instant Pot.

I used chuck roast instead of stew meat, with potatoes, carrots, mushrooms & green peas. Served over brown rice with a side of crusty bread slatehered in Kerrygold butter.

Vodka waters.

Phew, this would hit the spot right now. Dinner was planned to be chicken/broccoli alfredo penne, but I have been running fever/coughing/chills since last night and have no energy. Covid test was negative, so who knows.

Might see what soups I can get Waitr'd in BR.

I felt silly making a stew in July, but sometimes the heart wants what the heart wants. It was delicious and I wish I could wiggle my nose and have some on your doorstep!

Do it! It's an absolute game changer. My stew was in the pot for a total of an hour and fifteen minutes and it was absolutely perfect. Meat gets so incredibly tender and you can make an entire meal in a fraction of the time it would normally take on the stove.

If you decide to try it, let us know! I have lots of great recipes and I'm sure others on the board do as well

I’ve heard amazing things about them but when I’m off work I like to cook, when I’m working I’ll use one of my crockpots and that’s my hang up. I know I do need to unbox it though

I’ve got an insta pot my mother in law regift me and I’ve used it once or twice. I always forget about it when I’m planning a meal.

I should 100% utilize it more often

BCK, I would chow down on that Frito pie so hard!

I roasted some eggplant, inspired by one of LL’s meals a week or so ago. Topped it with some crawfish leftover from my pepper challenge dish. ETA: Feel better soon, LL!
