Skin potatoes (I like to slightly boil them, ice water shock them, and then twist the skins right off)

Mix everything in a large bowl and mash away

Yes to all, and cabbage is good for you.

There is a little place in Breaux Bridge that serves some of the best fried catfish around, Le Cafe, and it comes with an excellent and generous portion of cole slaw.

Baked chicken with sautéed shrooms, fresh corn, fresh tomatoes, steamed veggies. Had a bowl of blackberry cobbler Blue Bell that put me to sleep before I could post last night

If that the place that used to be a casket factory many years ago and is now a restaurant?
If so, I ate a pecan crusted catfish there years ago and still talk about it. It was that good.

I don't know anything about that. Never heard of it...Doesn't mean it's not true.

but still.....I came for the catfish and cole slaw.
