Tomato & Cucumber Salad Recipie : Needed

Typically we make a summer salad w Tomato, Cucumber, Red Onion, Green Onion, Apple Cider Vinegar, S&P. It’s great. Maybe w a little Dill.

Anything else I should try? I’ve got a pile of cucumbers.... too big to pickle. Gonna make a little salad tonite to go w some grilled fish.

Butcher in New Orleans makes one that is excellent

A friend's mother used to simply toss the cut cukes and tomatoes with mayo, salt and pepper and put it in the fridge to get cool. I always swore it had more ingredients than that because it tasted so good. I still make it, but add thin sliced sweet onion. So simple, but good.

-Cucumber, fresh mint, crumbled feta, and a drizzle of olive oil; toss so the feta breaks up and coats everything
-use a mandoline or sharp knife to cut the cucumbers lengthwise into ribbons, as thin as you can manage. Mix rice vinegar, some sugar, and a splash of soy sauce to dress the cucumbers. Add a fat pinch of red pepper flakes if you like heat (or mix sriracha into the dressing). Slivered green onions are nice in this one, as is a SMALL bit of toasted sesame oil.
-finely chop the cucumbers, and add minced sweet onion (as small as you can make it). Use lemon juice, lots of chopped fresh parsley, and a little oilive oil.

What do you mean by "too big to pickle"? Cut them in slices and pickle them that way unless you left them on the vine too long and the seeds are big and tough, and if that's the case, pick them sooner.

If not, you can slice them and make Bread & Butter pickles or sliced dill pickles with them.

One of my favorite tomato/cucumber salads is quite simple. Put the cut up tomato and cucs in a bowl, crush a couple cloves of garlic and then lightly salt the garlic and pull your chef's knife across the board to make a garlic paste. Add a few leaves of Sweet Basil chopped fine, vinegar, olive oil and salt and pepper to taste. Let this sit in a fridge until cold and enjoy.

Cucumber
Tomato
White onion

Half vinegar (i go heavy) half wishbone Italian
Salt to taste

I do a Greek salad a lot. Tomato, cucumber, red onion, olives, feta cheese. Add a little dressing. Keeps in fridge for up to three days.

Gee. There were multiple suggestions. This is a food board where folks routinely ask for recipes tried by others. Maybe you should stick to another board, since you don’t understand this one.

Had one yesterday. It get no better but the cucumber and tomato have to be fresh and homegrown

I love watermelon and tomato salads. I'd give it a try with cucumbers and tomatoes.

Just happened to see this today. It's a Greek watermelon salad that includes tomatoes and cucumbers.
