Origins bought these for our Christmas dinner, but decided to order a whole turkey breast from Gonzos’s and just make some sides for Christmas. Salted them yesterday with plans to cook them, but didn’t. Figured the basketball game and a couple of bowl games were as good a reason as any. Going to try some black truffle sea salt I got for Christmas mixed in a compound butter on one of them.

Nothing like a live fire.

That’s some fine looking meat. Ribeye is my favorite steak and it’s just so much cooler with the bone. Plus that meat right next to the bone always taste better for some reason.

Kept the cap for myself, decided to use regular garlic herb compound butter I made and sprinkle the truffle salt on after slicing. Truffle salt gave a nice flavor, would use it again. Still trying to finish off these Christmas sides lol.

Speaking of expensive steaks, I saw these at Costco tonight...not sure if this is a good deal or not, but holy hell are these things fatty. I've never seen a cut like this up close.

ETA: Those tomahawks look amazing.

Nice work. The fire pic makes me want to sit out there and have a drink before enjoying that steak.

Idk if it qualifies as good deal, but I would assume Costco gets legit A5 Wagyu as they look very nice. I would be worried the guy in the meat department would mechanically tenderize those like the rest of them lol.

I must have missed the memo that those are quality steaks. If I wanted to eat that much fat, I'd just settle for eating grilled pork belly.

I just don't see the appeal of a cut of steak that heavily marbled with fat.

That marbled fat is different from the big strips of tougher fat on the perimeter of the steak. That marbled fat just melts away in the heat and basically enhances the flavor and texture of the meat as you eat it. This can make steak so tender you can cut it with a fork. One type of fat is intRAmuscular and the other is intERmuscular. I can never remember which is which, but I believe the marbling is intRA.

ETA: That fine marbling that is distributed throughout the steak would be similar to injecting fat throughout the meat. If you inject a little bit of fat into a 100 places distributed throughout the cut of meet, you will get better results than if you injected all of the fat into one spot in the center of the meat.

My local butcher has steaks that look similar to those, but they are more than twice as much, so that's a pretty good deal, actually...

Celebrated my engagement with Waygu steak at BR Prime at the Beau Rivage. The best steak I’ve ever had. Rare, sliced and served with chop sticks. It almost melted in my mouth. My mouth is still watering thinking about it. Those Tomahawks looked great!

So, some fool is willing to pay $250+ for 2 steaks that the fat will literally melt away when cooking---just like that type fat should as the heat renders it.

Then you wind up with what??? 5-6 oz. of bits of meat to eat. Count me out.

Of all the times I’ve seen wagyu served, I’ve never seen it cut that large and that thick. The butcher did a disservice here. You should be able to serve four with one of those steaks.

I like to reverse sear my steaks and so I prefer them thick. I slice them up and serve them family style.
