Tomahawk Ribeyes

First post, so go easy on me. Cooked a couple of Snake River Farms Tomahawk Ribeyes last night. They were huge, one was 3.7 lbs and the other was 4 lbs. We did indirect heat in the smoker for about 2 hours at 275 until they hit an internal temp of 120. I let them rest for about 10 mins and then moved them to the direct heat for 1 min per side. Finished them off with a little compound butter as they rested. Came out incredible. Used Meat Church Holly Cow and Garlic and Herbs for seasoning. Not cheap, but definitely worth it.

When I ordered them I was expecting them to be in the range of 2.5 lbs, but they came in a good bit larger (3.7 lbs and 4 lbs.). As a result, 4 adults splits one of the ribeyes. We'll have the second one for dinner tonight.
