This is why I'm having difficulty with the list:

Best Greek - Was Alabasha, until my last visit. I ordered a beer and was ready to order food, but my server disappeared for over 20 minutes. I was noticing the time on my watch at that point because it took me a bit to get greeted and get a drink. After I had a drink halfway finished, a group of three came in, ordered and received drinks, ordered their food which the kitchen was now preparing. At that point I decided that if I finished my beer without seeing the waiter again, I'm just going to pay for it and leave, which is what happened. I walked up to the counter and asked to pay for my beer. The guy looked surprised and said, "You don't want to order any food?" I told him that I did 25 minutes ago, but now I just want to pay for the beer. For this, Alabasha cannot possibly be the best Greek restaurant.

Best Sushi - Was Waka House, until they took a high end item and took the liberties to stuff it with fake Krab (should be Krap). Imagine going to Fins, ordering your favorite fish only to find that they've stuffed it with fake Krab. Fake Krab coupled with room temperature bottled beer will not earn you a spot as the best.

Best Thai - Was Thai Chili, until I was served a noodle dish where the noodles were so broken up that the majority of the pieces were less than an inch long.

Best Vietnamese - Here's my favorite: Was Dang's, until I drove across town, ordered a bowl of Pho and was told they were out. Folks, this is the equivalent of McDonald's running out of hamburger.

Just some examples of how inconsistencies eliminate some from being the best. My list might have to be named the "Better of 225".
