Probably good but I don't put sausage in a seafood gumbo.

Shrimp and sausage gumbo is quite good. My stepfather would request it for Christmas and my wife would make it for him.

I put a mild sausage in my shrimp/crab gumbo sometimes because I can’t get decent seafood cheap in Tennessee. If I had decently priced and fresh seafood like down there, I wouldn’t do it.

It works pretty well and I like it.

I live in N.O. and there's not much "cheap" in the making of a seafood gumbo. The shrimp and gumbo crabs are reasonable, but if using oysters, crawfish tails, bay scallops or lump crabmeat, it gets to silly levels of $$$.

It's nothing to have $50+ in a gallon of seafood gumbo if using all of the above.

That gumbo looks great and I am sure it tastes great.

I normally only use shrimp, crabs and sometimes oysters in my seafood gumbo, however, I would put a good andouille sausage in it and be happy.

I like to use Tasso cut into small pieces to give it a little bit of smoke flavor.

1) Nothing is more aggrivating than someone who leaves the tails on the shrimp. It's gumbo. Now i have to wade through the gumbo to remove the tails. Just peel the damn thing.
2) Same with the snow crab shells.
3) Every gumbo i make has sausage in it. Never heard of one that didn't, but maybe that's just me.

You'll pay that alone with the price of crabmeat nowadays.

This guy has a pretty good channel overall. His egg fried rice is top level. A little unorthodox here with the gumbo, but I would trust it.

This kind of food would be warmly received in most higher end restaurants in New Orleans. Chefs at those places are expected to innovate in their own way.

More thoughts:

I like that he puts the MSG right in front. It's close to harmless for most people and it adds great flavor.

I don't like slicing the sausage on the bias for gumbo. Cutting straight across keeps the pieces bite-sized.

Josh has an irritating personality. I was unable to get past that and only watched the first 10 or 12 seconds of his voice. Did I see him cutting up carrot in the intro? Please don't tell me he put that in gumbo.

That was for the stock he made from beef and seafood.

I couldn't get through the video either.

You basically have to be an infomercial type character to get a following on YouTube unless you're already famous. Being 'normal' doesn't cut it.

I'll give the guy credit because he immediately came out and said this isn't traditional. It looked good but did seem way overkill on the seafood

That explains everything. Like many other Old Farts, I embrace my crabbiness and hate infomercials. My record for watching them is probably 30 seconds.

Well at least you can get fresh and decent. I’m always jealous when I go into a regular supermarket down there over seafood lol.
