I'm making French Onion soup tomorrow! I got some oven-safe crocks for Christmas, and I'm really excited to take them on their maiden voyage.

My wife loves it when I make French Onion Soup since I do it right and to do that takes a fair amount of time, but well worth it in the long run.

She likes hers with some Swiss on top and tossed in the oven to melt and lightly brown it and than add some of my homemade croutons to finish it off.

Splurge some and get some real gruyere cheese. It's night and day in the finished dish.

It will be my first time making it, but I have nothing but time and I figure as long as I don't rush it, I can pull it off.

I forgot about something I had to do this afternoon and things got put on fast forward. The soup simmered for about an hour and a half and I didn't get a few pictures. Here it is as I packed it in half gallon containers. I'll try to get a picture of a serving later.

The Hexclad pots are really nice! We've had them a couple of years now and love them. There are a few pieces we don't have but they aren't cheap.

They are wonderful. Easy to clean. I've never had anything stick so bad I had to scrape hard but it's nice to know that if it is needed it can't be damaged like a non stick surface.

I made a pot right before Christmas. I added mushrooms and some crawfish I had thawed- it was delicious. We had a bag of toast from Monjuni’s left over that made the perfect croutons. Slice of provolone over the top- it’s all I had in the house, but it worked.

For those considering hexclad but put off by pricing Costco has a set of Henckels Hxagon pans which looks to be the same design/construction/technology and a set of three pans is $87. I've had them for a couple of weeks and so far they are bad arse.
