I do it all the time. Not all that different from Ms Ruth's offering. You are correct that it is one of my favorite sides.

I used to make a spinach dip that was really good. I can't even remember the recipe.

I looked up the copycat recipe for this and was wondering if cream or half and half would be better than milk?

Mine is done with recipe and photos ready to post. Sadly, as good as I thought my original entry was, I have had one of those forehead smack realizations of what I should have cooked and may submit two entries, as bad as that usually works out for me.

99.99999% certain a certain Lady from Louisiana is going to win, so I'm not sure why I am worried about competing.

Spinach needs to have a starring role, even if a protein is the main ingredient. Does that help? But you won’t be disqualified unless there is zero spinach. We let voters decide if a dish doesn’t feature the ingredient enough.
