Cooking rules will be finalized and available prior to event, but basically you cook a 5 gallon or less pot, your choice of what you want to put in it, (pork, chicken, seafood, wild game, road kill etc) on propane, you can prep as much as you want before hand but cooking must be on site , to make it simple you have start with raw rice and cook it onsite , if you want to cut your veggies, meat, make your stock or smoke some meat before hand that is fine. You will have 3 hours to cook and you are responsible for providing all of your own groceries and cooking equipments. At the conclusion of cooking you will provide one sample to the judges and the rest will,be available for the people's choice award.
Jar Roux is ok, right?

Only if you add a can of cream of mushroom
If you want to use jar roux , go ahead

The only all-encompassing, life-changing, rules-to-live-by, sexual-orientation-de...wait, what are we talking about? Oh, roux in a jambalaya...go stand in the corner, say 17 Hail Mary's, and skip your quite obvious daily Starbucks "fix" so that you may aspire to be a decent human being and support BOTH of our main charities. Seven of Nine requires your compliance.

Cooks/Team should supply all their booth needs to serve (includes ingredients, paper towels, garbage bags for clean up, spoons, etc).
Sorry I couldnt make it last night, still have guests at my home and we cooked for them.
Let me know where to send the check. Boss's team is in.

So bowl sizes for samples are going to vary from team to team?

We have a lead on getting this donated, but have not confirmed, but plan on bringing your own, I am thinking a small plastic cup and plastic spoon/spork???

Needs to be uniform and cheap. Like a small paper hot dog tray

$5 to sample all of them is a bargain.
The few I've been to worked where you paid and entry fee and got 5 tickets and a seperate ticket to vote for the peoples choice.
Good on you guys for getting this going, I really hope that I can attend, my son is in a tournament that weekend in Hammond so hopefully I can make it.

I'll take care of the plastic-ware, napkins, and bowls for the guests/judges. I'm working on lining up more sponsors, several of which have these items to donate if they come on board. If not, I'll just buy the stuff and write it off on my taxes. Each team will take care of their own serving spoon.
Checks need to be made payable to either of the 2 charities and mailed to or dropped off at the bar. Address is Big Heads Tavern - 1051 Millerville Road, BR, LA 70816.
Little Angels Foundation website
Semper Fi Fund website
I cannot stress enough that the checks need to be payable to either The Little Angels Foundation or The Semper Fi Fund. We do not want to risk any semblance of impropriety. Please send mail to the attention of Jambalaya Cookoff. Also, please include:
Team Name
Members names
Contact info for at least the team captain (phone/email)
It would also be helpful if you pick your charity so we can verify tax status beforehand.
We're knocking around the idea of calling this thing "Halos and Hand Grenades Jambalaya Challenge/Cookoff" because of the initial 2 charities. Any thoughts?

2 great charities. Can not wait for this event. Will we be allowed to bring 10x10 tents to cook under?

Why is this thread anchored now?!

Yes

Guess the powers that be don't want us using the board for non-TD business.

As I've mentioned before, I have a quite large cookbook collection. Well, I'm looking to pare down a bit, so I would be willing to contribute 12 - 20 cookbooks to be raffled or otherwise given as prizes.
Books already in the pile include 2 of Emeril's books, Jack Daniel's Cookbook, Frank Davis Seafood Notebook, TV's "Chopped" cookbook, Napoleon House, Great Sausage Recipes by Rytek Kutas, a couple of sushi cookbooks, Plantation Celebrations by John Folse and I Want Dat Cajun Cookbook by Remy. Let me know if y'all are interested and I'll pick out some more. Hopefully the logistics of a drawing can be worked out.
If there's no interest, Goodwill will get some books to sell.

Wow, this thread got "un-anchored", anyway chicken has requested that we not use tiger droppings to promote this event and with that i have stepped away, the last I heard was jeep freak was taking the lead and has a great event planned
Posted on 4/16/16 at 2:22 pm to Tigerpaw123
TP, I made plans for kids graduation after you stepped away & since it really wont b a FDB event.

The turn of events sucks, I'm guessing this will take the wind out of the sails.
