Since shipping is $20 anyway it’s best to buy more than one wheel/ball.

The Vallagret is so damn good:

Did Edam this year as well:

Earliest ship date you can choose is November 6th…so it’s a bit of a wait.

That's a lot of cheese and the shipping makes it a hard buy. I'd love to get some but afraid we couldn't eat it all after opening!

No doubt. It’s a holiday order for sure. I can get through the Vallagret, going to have to do something with Edam though…make a big mac and cheese for a holiday party, I don’t even know.

It would be great if MSU did some pop ups on the gulf coast. I'd drive to get the Vallagret!

They have a facility on Stennis, but they have to have other extensions down here. An MSU Cheese truck would be great.

Both can be frozen. Choosing which one to buy is impossible for us, so we buy both and make cheese dishes every night if we can.

So good, thanks to the pampered cows who donate the milk to the University.

That’s an every year purchase for us.
The dairy store on the State campus is so nice. I would love to see LSU do something like that.

From their FAQ:

How long will the cheese last once purchased if left unopened and refrigerated?

Our cheeses are good from 6 months to 1 year. They will generally get sharper with age.

How should cheese be stored?

Cheese must be stored under refrigeration at temperatures of 45 degrees Fahrenheit or below but not below freezing. Keep the cheese tightly wrapped in plastic wrap or an airtight zip-locked bag. Cheese will travel well in an air-conditioned vehicle but should not be left in a parked vehicle during hot weather.

Can I freeze the cheese?

Freezing the cheese is not recommended because the cheese will become extremely crumbly after having been frozen. If you do freeze the cheese, thaw (in the refrigerator) only the portion that you will be using immediately. Grated cheese can be frozen to be used in casseroles.

Years ago I worked in an office and we had a vendor that brought cheese every year. It is really delicious.

Thanks for the clarification in what I wrote.

When we freeze the cheese, we only use it for cooking. No cheese freezes very well for eating alone. We use a lot of cheese in cooked dishes though and frozen works fine for that.

I've tried waxed bags to store cheese, and even hard cheeses like Parm or Pecorino don't really last that long. Even on the hard cheeses, the rind just seems to keep expanding with less edible actual cheese.

I'd love to buy a variety, but 2 pounds of cheese a pop as a single dude? Probably can't do it. I'm sure I'll drink too much and order 8 pounds next week anyway. This is probably the fourth time I've been in this thread looking at the cheese.

Don't wait. I had a tab open to buy the large gift-pack but slept on it for a couple days. Sold out. Had to go with some individual products instead.

Shipping to LA was $25 but no sales tax.

You pick your ship date, which will be a Monday starting with Nov. 6.

Dang. The motherload. My shipping # has been created, but it’s not at the UPS yet.

What are you going to do with 16 lbs of cheese?

I cut the edam ball into quarters and vacuum seal each quarter. Never had a problem with any of them going bad over the next 3-4 months.
