Depends on if sausage is made with collagen casing or not. Most non fresh commercial sausage is synthetic. You are supposed to cook the boudin in steam or grill to cook the casing too.

I passed through Scott saturday on the way to the VP.
Picked Billy's this go round. Regular boudin, smoked boudin and those pepperjack boudin balls.

I like billy's and t-boys when it comes to boudin.

when it comes to smoked sausage or ponce, it's teet's in ville platte.

I had some NuNu's yesterday while in the area. It's in my top five. Billy's smoked is #1, and it ain't even close.....

I saw no one posted what Tasso was. Basically its like smoked ham but it comes from the shoulder instead of the butt. Its a spicy/pepper meat. Its usually cut into 3 inch thick slices and can be eaten on its own or chopped up and put into gumbo/gravy/jambalaya. My wife from Creole throws it in a pan and fries it then tears up on its own.

This is an article from the Boudin Link about a place in Lake Charles called Sonnier's. It's some of the best I have had and right off I-10.
