Made my way to Evangeline parish... this is pretty damn good! Very Meaty so if you like that sorta boudin, you'll be pleased. IMO, it could use a touch more cauliflower and a little less meat. I think it'll be even better on the grill. Not cheap though... $7/lb and it's selling insanely fast.

I don't care for that but some good boudin case removed on a plate with a couple of runny fried eggs on top is pretty hard to beat.

If you've never had cauliflower rice, it's actually pretty good. The texture is surprisingly convincing. If the dish is well-seasoned, you'd really never know it wasn't rice. Someone talked me into trying some in my gumbo recently and I wanted to hate it but it was really good.

Let me start off by saying, IMO, T-Boy's is the BEST boudin hands down so I knew I wanted to try this "healthier" version when I heard about it. I passed by T-Boys today & picked up a link of the low carb boudin. Texture is mushy-in general & as compared to his regular boudin. Very meaty, almost to a fault. Seasoning was very good-as usual. After eating about a 1/2 link, I did start to notice a taste, maybe the cauliflower, that I was not used to in his regular boudin. All in all, it was ok. For me, it won't take the place of the original; when I want boudin, I want boudin & will stick to the original. Would I eat it again if offered? Yes. Probably won't buy it again though. For people who are strict about low carbs, it's a great alternative. Good job T-Boy for attempting to bring a little health to true Cajun traditions.

I agree with it being almost too meaty.. I think he should add a little more cauliflower.

No. I'd say half and that's being generous. It's 80% meat probably.

Yeah, it is nowhere near the ratio of rice in the regular boudin. Also, the riced cauliflower does disintegrate a little, more so than rice, so it is not as visible in the mix as rice is.
