I eat fake crab rolls (it’s really Pollock) from H-E-B. It is what it is for 7 or 8 dollars. I’m not pretending like it’s from Uchi.

I dont remember the exact point, but i remember being a douche because of it.

Then i got wiser and realized many forms of food which are gatekept for various reasons are done so by people who dont care about the food, but the status associated with it.

Good food tastes good, period. I respect tradition, but embrace fusion and new ideas equally. Being a snob for any type of food is foolish.

i missed the old place. easier to get intimate dinners. i have tried a few times to book an omakase dinner to be told not available every time :(

i am glad for their success though, and the place in there old spot is great too.

We had this box for breakfast in Kyoto last year..It was good but I don't know what 1/2 of the food I ate was.

Ive gotten to the point now where I only go to the spots that have better fish and dont bother with the rest... I used to pop in somewhere and get a couple of rolls or whatever for a quick lunch.. not so much the last 10 years or so...

My sushi intake has gone down quite a bit.. and I'm good with that!

Went to a couple of places in Honolulu in 2019.

Forever changed my concept of good sushi.

However, totally still down with sushi from cheap places. They have their moments

A buddy of mine was stationed in Japan for a while. He said he ate some of the best sushi, but he got burnt out. He still won’t eat it to this day

Best sushi I ever ate was at Nobu in Malibu. My next favorite place is Aki in Covington, La. I hear the chef trained at Nobu, Ca. Simply amazing.

I wouldn't say I'm a full blown sushi snob because I like the basic and cooked stuff just fine too, but Uchi in Houston is absolutely what changed me into being a lot more adventurous with my ordering.

I know it's getting bad when we get new places opening up like Homakase and my reaction is, "Eh, they don't have anything Umami can't get, and in fact are missing a lot that they do have."

I did say just yesterday that I need to lower my expectations some because we will reach a point where we've tried all there is to try from the water, and I need to stop expecting new fish I've never heard of.

I have only been once and it was before the funeral of a friend my own age (I'm only 35). I've never felt so guilty about how much I've absolutely ADORED the food at a pre-funeral meal. We should have eaten somewhere much sadder and saved the outstanding sushi meal for another occasion.
