Whole unless you have some really huge oysters and you might half those for more even cooking, perhaps, but never chop.

funny seeing how much popular the sausage gumbos are further inland. when i was growing up the only gumbos where shrimp and crab, shrimp and okra, etc etc. i dont think i had a gumbo with sausage in it until i was out of high school

Similar experience. Growing up in Laffy, I only remember having seafood gumbos, though no okra. It was much later that I had a poultry gumbo.

I had a different experience.
My Paternal Grand Parents always had Shirmp and Crab
My Maternal Grand parents always had Chicken and sausage with whole boiled eggs in it.
One was from Vacherie, one was from Chauvin.
When you ate seafood in Vacherie it was crawfish, choupique, catfish and turtle. When you ate seafood in Chauvin it was boiled crabs and shrimp. Fried speckled trout, flounder and redfish. It was all good though. Suprisingly, my Chauvin Grandparents were the only ones who put any kind of tomato in a gumbo. Vacherie folks never did that.

Good post. I love the distinctions birthed by parish lines and different regions....almost as much as I love the dumbass opinions created by them.

4) Wild Duck - duck, Andouille, dark roux with medium/thick body
I see a lit of people prefer lighter rouxs on here. I tend to prefer a thicker gumbo. In general, gumbos near New Orleans seem to be thicker I would assume. Definitely no tomatoes for me though.

Don't serve it with rice.

Yea, I didn't like that either. I'm from the area and have grown up eating rice in gumbo and stews my whole life.
