Suppose you are grilling

Chicken with cream cheese wrapped in bacon. You skewer it with a toothpick or two. But it still falls apart as you cook it. What would you do to fix this?

Are you using thick sized bacon? Try to push the skewer through the meat of the bacon instead of the fat.

skewer evenly on both sides is the only way ive been able to keep stuff from falling apart

I would use my thongs to squeeze it back together, take them off the gril onto a pan and either replace the bacon with longer pieces or reward with the original bacon if possible!?!?

I’ve done this a lot and never had this issue when the bacon is wrapped correctly

When wrapping something with bacon I put it back in the fridge to set. It helps the bacon to stay where wrapped. Sometimes toothpicks are needed.

Just logistically. Raw chicken, bacon, and cream cheese. Sounds good, but the logistics on a grill may not work out.

Get a roll of butcher's twine and get handy with it. It's great stuff in the kitchen. Once you get it down, it takes no time to truss up things like roulades, roasts, birds, stuffed meats, etc. The twine won't come off mid-cook and you can handle the trussed item pretty much like any item because it's not fragile and you no longer fear it falling apart on you. When the cooking's done, it's far superior to toothpicks, too, because a couple of snips with your shears and it pulls right off the food. No fighting to pull toothpicks out of the meat it's stuck to and destroying the thing you wanted to hold together in the process. Also, no forgetting about toothpicks that you find later while you're trying to eat.
Don't be tempted to use just any old twine, either. COTTON butcher's twine. Synthetics are right out because they'll melt and put funky flavors and chemicals into your food and some natural twines are out because they'll leave fibers behind in your food. Cotton's your friend.

That’s an easy fix. Pull that mess off of your grill, apologize to the grill and to the Gods for doing this, and then replace it with a steak.

Use metal skewers or use vegetable grilling plate to cook it
