Sunday's Smothered Pork Chops and Homemade Rolls

Saturday the wife picked up some pork loin chops(I thought she said she had real pork chops)and I had intended to grill them but smothered was suggested and so it was.

Started off by seasoning and browning the chops.



Caramelized some onions



A while back I made sausage and deboned pork butts myself. I roasted the bones with bits of meat still on them and made a stock which was then made into pork gravy, Foodsavered and frozen. I used this gravy to add to the chops. Not bad at all! That was left to simmer while I did some other stuff.



I cooked about four or five slices of bacon down and added onions for some spinach which of which only my son and I eat.



While the pork chops were "smothering" I made some homemade rolls. The dough was made, doubled(actually bigger) and shaped into rolls. I forgot to get a plated picture. I'll see if there are leftovers I can make a plate with for lunch today.





Let those rise and into the oven they went.



When done they got a lil melted butter



Oopps.........! Two rolls disappeared! Lol...... I had to make sure they were alright to eat.

That bread I would eat 7-8 pork chop sammiches with that bread baw. Brings me back to gam gam making homemade yeast rolls.

I would eat half of those rolls as soon as they came out of the oven

nothing better than fresh, warm rolls

Yeah, while they were hot I put three of them away with butter. Mmmmmmmm.........

Oh my God, those rolls!

Chops look good too, but could have used a plated pic.

Alright, so I had leftovers for lunch. Not as nice looking as yesterday with the pool of gravy on the bottom of the plate but still every bit as good or better.

I was just getting ready to post as per Louie T's request as well.........

These rolls are awesome! Out of 28 rolls there are 6 left. Lol........ Light, tender as cotton.


SOFT SWEET LIGHT ROLLS

Author: Joyful Homemaking
Cook time: 15 mins

INGREDIENTS
2 packages or 2T yeast
½c warm water
2 tsp. sugar
1 cup hot water
1 cup milk
2 beaten eggs
1/3 cup oil
¾ cup sugar
3 tsp. salt
7 to 8 cups flour ( Start with 7 cups, then as you’re mixing it add more flour till the dough is just a touch dry, and not too sticky.)


INSTRUCTIONs

Put in bowl together to let yeast activate: the yeast, ½ cup warm water and 2 teaspoons sugar.
Mix in separate bowl: the hot water, milk, eggs and oil.
Mix in another separate large bowl: ¾ sugar, 3 teaspoons salt and the flour.
Mix two bowls of wet ingredients together.
Make a hole in the dry ingredients and pour wet ingredients in.
Either mix by hand or mixer dough hook. Rolls will be lighter and fluffier if you use your dough hook.
Cover and let rise for 45 minutes in a warm non drafty area.
Spray your pan or pans with cooking spray.You need a pan with sides like a casserole dish or large cake pan.
Roll your dough into golf ball size balls and place about ¾ inch apart in pans.
This should make 2½ dozen rolls.
Cover and let raise again for 1-2 hours till they at least triple in size.
Bake in 350 degree preheated oven for about 15 to 20 minutes till golden brown. When you take them out you can brush butter over them if you like.

It's corrected now. It should have read one third cup. I don't know why it does that when I copy and paste.
