Filet Mignon with a Red wine portabella reduction and creamed spinach
I started the steaks in the sous vide with a pat of butter, and some fresh basil

Once they had gone in the sous vide for about an hour it was time for a quick sear.

Once i took them off, I deglazed the pan with some red wine and tossed in the mushrooms. I had the creamed spinach leftover from the night before, so I didn't get pics of that being made. Here it is plated up.

Money Shot!

I served it with the Andrew Will Cab. Man that is a good wine!


Creamed Spinach Recipe

20 oz. baby spinach
2 tbsp. butter
1/2 medium yellow onion, finely chopped
2 cloves garlic, minced
1/2 Cup milk
1/4 Cup heavy cream
4 oz. Cream Cheese
Splash of Herbsaint
Salt & Pepper to taste
Pinch cayenne pepper
1/4 Cup freshly grated Parmesan

I used to make creamed spinach years ago. You must post the recipe.

I’m not much of a grill master so I decided to go a different direction. I’m going for laughs and even if some of y’all don’t get the reference I think y’all will get a kick out of it. Yes I actually cooked this, no I did not eat it.

My submission is a Hard boiled milk steak with a side of raw jelly beans

Thats absurd. Everyone knows that the cinnamon jelly beans and the licorice jelly beans are not compatible in tbe same dish...

My son had a salt block for a while that we used for decent HEB ribeyes. I really like the flavor it gave the steaks.

I have till tomorrow morning. I probably have enough leftover to make another of the finished product. Not sure.

Negative it reminds me of some of the dishes we would prep for the pledges during hell week
