Stumbled across some quail and am looking for a recipe.
Saw one that grilled them and finished with a Viet style hoisin glaze that sounded good. Wondering if anyone here has a go to?

That sounds real good. We brine them for a few hours and be careful they will burn fast on a hot grill.

If you have a sous vide machine, it lends itself really well for wild game (quail, deer, rabbit, pheasant).
It's very easy to overcook them and with a sous vide it takes care of that issue. You can also cool it for a longer duration to tenderize the meat a bit, especially good for venison roasts.

I cook on the grill. I apply a really good fresh olive oil, basil, rosemary, salt, pepper and Tony's. On a hot grill (cooking off of the fire), I cook for about 8 - 12 minutes, flipping halfway through. Cooking time is dependent upon how hot your fire is. Really simple. We also buy stuffed quail (stuffed with shrimp dressing) from Quality Seafood in Austin. Cheap and a great meal.

Stuff them with a cornbread dressing and bake them in a dish.
