Starting Thanksgiving with a Fail

Dry brined the turkey like I've done in years past. Pulled it out this morning, stuffed the cavity. Did a full truss. Fired up the chimney for the grill. Turkey goes on the grill. Everything is pretty much on time.

Here's the fail. The turkey is too big for my small grill. The lid won't fit on without resting on top of the bird.

Solution-


Lid doesn't fit snug but now it's not resting on the breast meat. I'm probably increasing my cancer risk, but whatever. I want grilled turkey.

Trade all 9 small grills in the background for one large grill when this is all over.


Quit drinking Diet Coke.

I love improvised outdoor cooking solutions. Well played. Wrap some foil around the part that won’t close if you’re losing too much heat.

Not a fail. That thing will prolly end up being the best one you’ve made. shite like that is what makes you a good cook. Thinking on the fly. Adapt and overcome. Enjoy that bird

Indirect. Coals are piled on either side of the bird with a water pan in the center. I will need to rotate the turkey from time to time to get some even cooking but that's it.

Pull bird, take out the backbone and flatten (spatchcock).
You will be able to get the lid of the pit on and it will cook faster.

Yeah, that's how I usually do a chicken. The one think I don't like about spatchcock is that I lose the oysters. My desire for eating them overruled my desire for a faster cooked turkey.

This is also just for two people. Not rushed for time except for getting it done while the sun is still in the sky.
