sous vide steak question

I received a sous vide for christmas and plan to use tonight for the first time. Question regarding the cooking process.
My family likes butter and garlic on their steaks. Should I put butter in the bag with the steak during the sous vide process or just add the butter during the searing? (I wondering if there is some big no o on having the steak slow cook in the butter for two hours)

I make a garlic butter and top my steaks after searing.

I don't put fats or aromatics in the bag, I add them after.
The danger of searing with butter is the low smoke point. It's very easy to burn. I would consider adding it after, or use ghee/clarified butter.

we were using ghee...but MAN you should try wagyu beef tallow instead for the sear. You will never go back.

You'll want to dry the steaks with paper towels before searing. If they're already in the butter you'll be removing most of this. I like avocado oil for the searing step, then top with compound butter.

I like to add the aromatics during the sous vide. I think it infuses some flavor. I also use them after for even more flavor.

The only time I add butter to the steak is when cooking filet because they are so lean. I discard any liquids and fat remaining in the bag after the cook.
Sometimes I add herbs and aromatics to the bag before cooking. They do impart flavor but are not necessary. Just make sure to use larger pieces so they are easily removed before searing.

butter after searing. I really only top with butter to have a nice juice to dip broccoli in.

I usually add butter but at the end of the sear. It burns fast as stated but I find it helps brown the meat and adds a good flavor.
