lol I just don't get it. We are in a day and age where you can very successfully prepare the same food in a variety of ways with a wide array of tools at our disposal yet there are still people who will criticize someone for trying something different.

Do you think his goal was to create a “sub par” product? Or do you think maybe he was just having fun with cooking and seeing how it would turn out? Why are some of you so threatened by change, or people doing things differently?

That looks fantastic!
a 60 hour cook sounds right up my alley. People that don't love to cook won't get it, but nothing relaxes me more than drinking a bourbon and cooking something, anything.

What was your final internal temperature? And was the meat the same consistency as doing a full smoke?

Well said.
Some people, myself included, love cooking. Trying different things. Might find something new, or better. Lots of negative people on TD just looking to criticize.

My first sous vide brisket was a total failure, but I did not have an actual appliance. I do now, and will be doing another soon.

I've done this several times and the results are always very good. I feel like a dick when I hear friends with their "I got up at four this morning and fired up the smoker for muh brisket hurrr!!!!" or whatever bullshite.

How was the texture?

Not sure I am brave enough to try this one, the fam likes the smoked briskets too much, to each his own though.
