Anyone try the overnight sous vide bacon Kenji recently posted about:

Sous Vide Bacon

Seems ridiculous, but might have to give it a try this weekend.

Ricky Bayless did this a few years ago on his show Mexico One Plate at a Time. Apparently the bacon is ultra crispy & dissolves in your mouth.

Tried it with a 1.5lb block of Wright's thick sliced.

It was underwhelming. I fried some on one side. Some on two sides. I broiled the majority. Way too much work with little reward. I should have just baked on a cookie sheet at 400F.

For the record, I dropped them in the SV water bath around 9PM and cooked about 8 or 9 the next morning.

I do cook pork belly sous vide ala Thomas Keller's recipe, but I'm not gonna mess with bacon. That's just silly.

I expect this to be the case, but may still have to try it out once.

Two downvotes for this comment. Who are the sous vide bacon lovers here? Please enlighten me.
