Ricky Bayless did this a few years ago on his show Mexico One Plate at a Time. Apparently the bacon is ultra crispy & dissolves in your mouth.

Tried it with a 1.5lb block of Wright's thick sliced.
It was underwhelming. I fried some on one side. Some on two sides. I broiled the majority. Way too much work with little reward. I should have just baked on a cookie sheet at 400F.
For the record, I dropped them in the SV water bath around 9PM and cooked about 8 or 9 the next morning.

I do cook pork belly sous vide ala Thomas Keller's recipe, but I'm not gonna mess with bacon. That's just silly.
