With the cool weather moving in I have begun playing around with soup options. Recently I have been putting together simple broth with whatever vegetables and chicken I have left over. I used up my chicken base and switched over to BTB roasted vegetable base and the wife liked it better. Now I want to expand my soup recipes. What type of soup do you like?

My wife makes some Mexican shite in the slow cooker that is just to die for. I think she just throws in a few cans or different beans, a few cans or corn, a few cans of chopped chicken and throws in a pack of taco seasoning and a pack of ranch seasoning then lets it go all day.

Sounds cheap and trashy, but let me tell you... fill a bowl and drop in a dollop of sour cream. wow.

I made some roasted butternut squash bisque a few weeks ago. Gonna pull some out of the freezer this weekend.

I love a good ham and bean soup, if you do ham for Thanksgiving you can use the leftovers

r/slowcooking on Reddit has been going nuts over this Creamy Chicken Spinach Tortellini Soup recipe for a year now. Decided to finally make it this past week and I see what the hype was all about.

The only thing different I did was smoked a chicken fryer ahead of time to get the smoky flavor and I cooked down the onion, flour, garlic, tomato paste concoction in a skillet rather than microwave.

I make a Mexican Pazole. There hundreds of variations that you can find with a quick google search.

Mine is simple probably not too authentic but it tastes good. chicken, stock, onion, bay leaf, garlic, hominy, rotel, chipotle in adobo sauce, and salt & pepper. Garnishing with some cilantro, shaved radish, and shredded cabbage.

I cooked a sweet potato and andouille soup a few times last winter that I believe I found in that soup thread. It was pretty tasty

Having some Taco Soup for lunch today!

Do you think the leftovers would freeze well?

You aren't beating a good French Onion soup imo.

Tom Yum Goong.

It's so damned easy to make, too.

I don't see why it wouldn't. I'd keep anything like crumbled taco shells or chips, etc., that you might use to garnish it out, though. That probably wouldn't freeze too well and you can easily add that by the bowl at serving.
