Somewhat Cooler Weather Gumbo

I went Thursday to pickup some stuff at Wayne Jacobs in Laplace to make a chicken andouille gumbo today in anticipation of this weekend's cooldown.
Did 99% of the prep yesterday including chopping onions, celery and bell peppers(did the garlic this morning), slicing andouille, smoked sausage and tasso. I used bone in chicken thighs but removed the skin.
Everything in the pot and simmering now,

Here's the gumbo when it was done.
Here's my bowl with some potato salad in the same bowl. Yes, the potato salad could've used a little more mayo in it. Which brings up the question..... Do you put potato salad in your gumbo or completely on the side?
Me, I could eat it either way.
Ended up with 2.5 gallons of delicious gumbo in the # 34 Le Crueset pot.

Side for me too. I like the cool salad with the hot gumbo. And I don’t like when it almost dissolves in the gumbo and you just have potato

My wife likes it freshly made and still warm. Which is how I prefer it in gumbo.
I do enjoy cool potato salad for just eating on the side with other meals, but warm in gumbo is the way to go.
