Some New Year's Day Eats.....

Too worn out last night to post but here's some of the food we had yesterday.
Chicken & andouille gumbo
Cabbage
Black eye pea jambalaya(this was a REALLY good batch this year).
Of course a nice cornbread goes well with cabbage.
Almond and amaretto cake I made with a almond buttercream frosting and a white chocolate ganache.

As traditional as it may be, and that’s how I grew up eating it, I’m not a fan a stringy chicken in gumbo.
We season and brown all of our chicken as a first step now to avoid this. PITA, but it works well.
