So, everyone has their own seasoning mix now?

Every cook online now has their own brand of seasoning.

I was sent a link to a TikTok of a local guy that I went to high school with and he's selling "his" seasoning mix.


Like how many different variations of Tony's can you put into a container and put your own label on?

They aren't even different variations. It's all the same ingredients made by the same factories with different labels.

Ill sometimes buy them just to see but you are correct. Most are just a variation of SGP.

The barbecue seasonings are the new cajun seasonings. There are so many barbecue blends out there. And I laugh every time I see youtubers using 2-3 different blends on one piece of meat. If your blend needs ANOTHER blend to make it good, then your blend sucks.

It's just another way for them to make money. If I like a guy, I'll try out a seasoning, but they're usually garbage. The only one that I've found worth a damn is Killer Hogs from Malcom Reed (HowToBBQRight).

It's the ultimate youtube scam. These home cooks mix the same basic seasoning with very slight variations, and they push it to their subscribers. The issue is the celebrity fascination that we as a people have. YouTube fanbois want to buy these things because they get caught up in the awe of making a youtuber a celebrity. These youtube home cooks do cookbooks as well. It's funny to watch people fawn over them and gobble up these products.

I can't fault the youtubers for taking advantage of this and making profit. A fool and his money...

I was pitched by someone with this exact phrase, they said they used Himalayan salt or something equally pointless.

I have my own but it just includes similar ingredients you can find, but doesn't cost as much.

Although this is my new go to for my ribs. I can't explain why but the flavor of this is damn good.

I wrap with honey, brown sugar, two tablespoons of bacon fat, and another little dusting of this and my ribs come out tender and flavorful than ever before.

What's the difference in buying one from a Youtuber as opposed to Tony's though? It's one thing if you're buying multiple one thinking that each is significantly different, but if you know it's truly six of one, a half-dozen of the other, what's the big deal?

Even then, I don't look at it that differently than someone who buys multiple brands of hot sauces. To each his own.

Tony's will always be a staple in my pantry and a go to in my arsenal but there are others out there doing amazing things with different blends right now as well

Other than Tony's, I do like (and can tell the difference between the two) The Cajun Ninja's Pai-Yow's cajun seasoning. Another one that comes to mind is "The Best Stop" in a red container. It's good as well.

On a separate note, I also like the "Blackened Seasoning" by Louisiana. I find it much better than Paul Prudhomme's and Zatarrains.

Why not make your own?


(Cajun Aces) Select Seasoning

Need:

1/4 cup Salt
2 Tablespoons paprika
1 Tablespoon Garlic
1 Tablespoon Onion Powder
1 Tablespoon Black Pepper
1 Tablespoon Cayenne
1 Tablespoon Sugar
1 Tablespoon Dried Herbs
1/2 Tablespoon Ground Celery
1/2 Tablespoon Oregano
1/ 2 Tablespoon Basil

*******************************

Directions:

Mix all together and store in an airtight container


Emeril’s Creole Seasoning Blend (Bam!)

Need:

2 1/2 Tablespoons paprika
2 Tablespoons salt
2 Tablespoons garlic powder
1 Tablespoon onion powder
1 Tablespoon black pepper
1 Tablespoon cayenne pepper
1 Tablespoon dried leaf oregano
1 Tablespoon dried leaf thyme

Directions:

Mix all together and store in an airtight container

My Creole Seasoning Blend

Need:

5 Tablespoons Sweet Paprika
2 Tablespoons onion powder
2 Tablespoons garlic powder
2 Tablespoons dried oregano leaves
2 Tablespoons dried sweet basil
1 Tablespoon black pepper
1 Tablespoon white pepper
1 Tablespoon celery seed
2 teaspoons cayenne pepper
1 teaspoon ground bay leaf
1 teaspoon dried thyme leaves

Directions:

Mix all together and store in an airtight container

My Creole Blend #2 with salt

Need:

1/2 Cup Kosher Salt
1/3 Cup Sweet Paprika
1/4 Cup Granulated Garlic
4 Tbsp Onion Powder
1/3 Cup Freshly Ground Black Pepper
3 Tbsp White Pepper
2 Tbsp Cayenne Pepper
2 Tbsp Dried Thyme
2 Tbsp Dried Basil
1 Tbsp Dried Oregano

Directions:

Mix all together and store in an airtight container

Tony Chachere’s Creole Seasoning

1/4 cup fine sea salt
1 teaspoon cornstarch
5 teaspoons Red cayenne pepper
5 teaspoons Garlic Salt
4 teaspoons ground black pepper
1 Tablespoon Chili Powder
2 1/2 teaspoons celery salt
2 teaspoons ground mustard
1 1/2 teaspoons ground basil
1 1/2 teaspoons ground sage
1 teaspoon onion salt
1/2 teaspoon ground oregano
1/2 teaspoon ground thyme

Combine all ingredients in a resealable container (1/4 cup fine sea salt, 1 teaspoon cornstarch, 5 teaspoons cayenne pepper, 5 teaspoons garlic salt, 4 teaspoons ground black pepper, 1 tablespoon seasoned chili powder, 2 1/2 teaspoons celery salt, 2 teaspoons ground mustard, 1 1/2 teaspoons ground basil, 1 1/2 teaspoons ground sage, 1 teaspoon onion salt, 1/2 teaspoon ground oregano, 1/2 teaspoon ground thyme).

Seal the container.

Shake until thoroughly blended.

Store tightly sealed in a cool, dry place away from light and moisture.

Serious Eats Cajun Spice Blend

1 teaspoon chili powder
1 teaspoon ground oregano
1 teaspoon dried thyme
1 teaspoon ground white pepper
1 teaspoon ground black pepper, or whole peppercorns
1 teaspoon red pepper flakes
2 Tablespoons sweet paprika
1 1/2 Tablespoons salt
2 Tablespoons onion powder
2 Tablespoons garlic powder
2 Tablespoons red cayenne powder
1/2 teaspoon ground bay leaf

Combine all ingredients in a spice blender and grind until fine, or grind red pepper flakes and mix all ingredients well. Store in a tightly closed container.

Paul Prudhomme’s Blackened Spice Blend

1 Tablespoon Paprika
1 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
3/4 teaspoon ground black pepper
3/4 teaspoon ground white pepper
1/2 teaspoon thyme leaves
1/2 teaspoon oregano leaves

Mix and store in a tightly sealed container

Bonus - My Crab Boil

Ingredients:

3 parts dried bay leaves; broken into pieces
2 parts fine ground cayenne pepper
4 parts celery seeds
4 parts dried coriander seeds
8 parts dried brown mustard seeds
2 parts dried whole black peppercorns
1 part dried whole allspice berries
1 part dried whole clove buds
2 parts dried crushed red pepper flakes
2 parts dried thyme leaves

Directions:

Mix all together and store in a tightly sealed container

To Use

Enclose in a cloth or mesh pouch, Tea bag or tea strainer colander, add to salted shrimp boil water when it begins to boil. Boil for 3-5 minutes then add shrimp, crabs, or crawfish. Cook for 2-3 minutes and then remove from heat and add ice to lower water temperature. Soak for 10 minutes to allow shellfish to take up seasoning. Optional, add cayenne pepper or hot sauce to taste.

I try them all. It’s a problem

KFreds is my favorite by far. Most are too salty and don’t add flavor.
