Mates we’re under China virus lockdown here in God’s country (Portland, OR) and neither the Chinese dentist who lives across the street nor his parents or children have been seen in two weeks now. Thoughts and prayers, etc. - multigenerational living ain’t all it’s cracked up to be.
Our local Winco only had non-meaty beef “spareribs” left in their beef bunkers, but at $2.49/lb I’ll take their scraps and make a feast.
We’re finna run at 275 degrees and smoke these babies up low and slow. Going to spritz with olive oil, cheap red wine, Worcestershire, and Rosemary a little later but for now we have them on the grill to settle in for hour 1. Have 20mg of instant release generic Adderall and some White Sumo indica THC coarsing through my body - I am lit AF.
Notice the roses and cherry blossoms - sorry if y’all are reading this and still live in Louisiana.

Last 45 minutes or so - my wrapping skills are lacking.

You weren't kidding not much meat on those
. You smoke that it won't matter.

What kind of wood are you using there?

Just a rec Tec hardwood pellet mix

I think they are delicious but they are better cooked as a steak (hot and fast) on a grill than to try and smoke them.

Noticed some of those beef ribs at my local grocery on Sunday (never seen them there before). They also had Wagyu NY Strips on Saturday, which I have never seen in that store before. This leads me to believe they are buying whatever they can currently get their hands on to stuff in the beef case.
Will also add that their seafood case was stacked fulled both days. No meat in the butcher case for a week, and very little poultry and chicken. But they got half a cow in their dry aging display.
