I season with what ever I have in the cabinet and put on the Primos with oak, pecan, or some fruit wood chunks. Let it settle somewhere between 225 and 275, and let her rip till she is ready.

Make sure you allow for more smoke time than you think you'll need, and make sure to have plenty of beers on hand.

Just use common sense. It's pretty hard to frick up a pork butt.

Yeah, I've made a delicious brisket and the dryest piece of shoe leather you've ever eaten. Well, it was tender but as the Texans would say it was DAF.

I've done Jay Ducote's recipe a couple times and it's always come out great. The molasses mustard and his dry rub.

If you can find it for $1.19 jump on it.
Alexanders usually has it for good deals if you buy it in the double packs. Costco has the same product for about the same price.
Alexanders is having a meat sale on Friday 2.49 for prime brisket which is cheap. Also, may have the pork butt on sale as well.

I love in Ohio so none of those recommendations aside from Cost-Co are available here.

Costco down here usually has them in the 2 pack.
Figured you lived up there.... just never know in here. Ha. But, I think the prices pretty much run the same. $1.19 is as about as good as it gets, every now and then you can get it at .99.

I checked a local meat outlet and they have it for $2.49, seemed high.
I feel like Kroger never has pork shoulders out, let alone on sale.

If you can find a Restaurant Depot they usually go for about 1.29/lb up here. Also dont inject, just trim it good, especially check the bottom (non fat side) for Lymph nodes and bone fragments ( depends who rant the saw that day) then put a good rub on it. Remember the stall is real and its done when its done. Also rest it in foil for about an hr, If you pull it right away all the juice will run out and will be dry.

I buy mine from Costco usually run under 1.99/lb and come in a smaller two pack. Typically boneless but there is no difference in flavor.
I prefer to inject these days, then wrap with foil to bust through the stall with a brown sugar coating.

I've bought and froze a few of those cheap double butt packs. They're still great
