Smoked pulled pork street tacos suggestions

I'm smoking a pork butt this weekend, except instead of going the BBQ route I always do I am going to use a Cuban marinade and coat it in a mojo seasoning. I've got some small tortillas to make street tacos with it for family.

What kind of toppings would be good for that? What kind of sides match well?

FRESH salsa.
tomatoes, onions, cilantro, lime juice, jalapeno

good crumble (not melting) queso cheese

I've also made fresh pineapple salsa with some white vinegar, pineapple and some crazy hot peppers a buddy grew last year. It was a huge hit in a meal just like you are planning.

All of the above, and double up your corn tortillas with a little cheese to "glue" them together and heat in a pan.

Pickled red onion, the vinegar will cut the fat on the pork a little.
Cilantro
Avacado
Crema

Lay some cheese straight on the grill an put a tortilla right on top when the cheese is melted flip it and add another warmed tortilla on top. Then stuff that with you pork and whatever toppings you want. Make a dbl decker tortilla stuffed with melted cheese

I like smoking the pork with a simple S&P rub since I usually use it for many different styles.

For tacos usually, after it's done smoking, I'll throw some pork fat in a searing hot pan to kind of pan fry/crisp up the pulled pork to make carnita style tacos (add taco seasoning when you add the pork). Usually only takes a minute or 2. Towards the end throw some sliced Monterey Jack cheese on top to melt down. Add some homemade pico, hot sauce, and crema and it's amazing

a good green salsa

3 fresh tomatillos husks removed chopped
? 2 chiles serranos or 1 jalapeno chopped
? 6 sprigs of cilantro chopped
? About 2 tablespoons of chopped onion
? 1 medium size Avocados
? ? cup water
? Salt to taste

Place the tomatillos in the blender with the chopped onion, serrano peppers and water. The process to a coarse texture.
Add the cilantro and the pulp from the avocado. Process again to desired texture, either smooth and creamy or chunky. Add salt to taste creamy avocado green salsa.

This is an amazing sauce for pulled pork tacos:

Johnny’s Cilantro-Lime-Avocado Sauce

A sauce to be used on pulled pork tacos (no BBQ sauce), brisket tacos, fish tacos, mexican inspired wraps, etc.

Prep Time: ½ hour

Ingredients:
Mexican la crema (12-16 oz jar)
Juice of 4 limes
Zest of ½ lime
2 clove garlic, minced
½ bunch cilantro, sprouts and tender stem only
2 large or 3 small avocado
3 cubanelle/poblano/anaheim or other mild larger seasonal pepper grilled and charred over your choice of wood/briquettes.

Instructions:
After grilling/ charring peppers, Place in a zip lock bag (15 minutes) and allow to soften.
Remove stem portion and skin (if you care for less spice, cut and remove seeds)
Place all ingredients in a food processor or immersion wand, except warm peppers and blend until smooth.
Add warm, cleaned peppers and blend until smooth.

A few weeks ago, I smoked a pork butt on my Traeger until it was probe tender. Then I shredded it up in my crockpot and added a citrus fajitas seasoning. I added 1 lime, a cup of orange juice, and 1 lb packs of sautéed onions to the pot and let it simmer for about 2 hours.

I had none leftover from my family. They all loved the citrus twist to taco night. Pork Carnitas Tacos.

Some people like cucumber on their tacos. I think that’s disgusting. But some people like it.

I could see that. I like radish in my pozole. Never had it in a taco but I can see how that would work.

Every time I do pulled pork, we always make tacos with it at some point.

Alabama white sauce goes really well with it. I’m not sure of the board’s opinion on that particular condiment. But I like it.


And some red cabbage slaw.
