Small smoker recommendation

I'm looking to join the smoking game with a smaller starter device. Been looking at some setups using the weber Master touch charcoal grills, I like the size and price range($200-300). Id would like for it to be fairly set and forget, I don't plan on leaving for 8 hours at a time but Id like to be able to leave to go grab some beers and not worry about it. There's a severe lack of outlets at my place so I don't want to be having to use more than one outlet. All advice is welcome but not consider electric or pellet grill

Don't pellet grills require a power source? Also I wasn't sure if a thermometer would require plug in, especially for a high end one(this is where I'd really rather spend money).

Is there a pellet grill that can even fit 6-8 racks of ribs, or 8 LB pork butt, for less than $600? Ceramic grill sounds convenient but a son of a bitch to move and a little bit on the high end for someone with no experience? I'm not looking to spend $1000 on something I have no idea how to operate.

Weber Kettle Mastertouch or a Weber Smokey Mountain. After a few cooks, the Smokey Mountain is pretty easy to use. Both are cheap and have tons of videos online.
I have both, a 22” Kettle and a 18.5” Smokey Mountain. A kettle gives you versatility to bbq and smoke. Both are great pits and put out awesome meat.
Look on FB marketplace. They always have good deals on both. I bought both of mine on there for half price, both brand new too.

Imma Pellet grill guy, for a couple $100 more get a RectTeq 590, it's all stainless steel and a fricking tank. amazing warranty too.

Welp I was leaning toward the weber but this looks fricking sick. In regards to the weber, how much temp adjusting to you need to do?

I just bought a 24 inch ceramic grill from Costco for $599
Smoked my first Boston Butt ever over the weekend.

I had one of those for a while. It did put out some tender meat, but the trouble I had with it was there was so much steam in the cooking chamber, I could rarely get a bark to set.

If your budget is firm a Weber kettle and a Maverick thermometer is probably the best choice. I've had limited success with mine, mainly struggles with temperature control when it is cold or very hot outside. Now it is only used as a straight charcoal grill, which it is very good at.
Maybe check out the Bronco or Pitbarrel styles, which I have not used but have heard good things about. I started off on a similar style Weber bullet and it made great runs until the paint peeled off and it burned through.
I'm currently using a rectec 340, which I can't say enough good things about. They make a hybrid grill/smoker called a Bullseye you may be interested in. With a pellet smoker you won't be able to learn fire management, which you should be doing if just starting off.

If you don’t want a Kamado I would go with either of the two gravity fed charcoal grills out right now. I’m not sure what advantages a pellet grill provide over those options now that they are out.

I think I will be looking into the Weber Smokey Mountain vs the Kettle. Versatility on the Kettle seems useful but I really only want this for brisket, pork, chicken etc

I have a Red Box by Sweet Swine O' Mine. It's legit. Double walled, insulated reverse flow. It runs smooth on very little charcoal, can run in the rain, wind etc. It's a smaller version of a competition Backwoods.
It can be used as a table top or stand alone. I paid over $400 about 4 years ago, last I looked they were on sale for $275. Most bang for the buck without a doubt.
