I have the 22" WSM and this isn't a defense of it, or a criticism of the 18", but just a comment on the smokers in general. Both of them have a hot zone around the outer edge of the grate. It extends in from the outer diameter about 2". I tested mine once and that hot zone was 5-10 degrees warmer than the center of the grate. I doubt it makes a huge impact on the overall outcome of the meat, but something to keep in mind if you're smoking at a higher temp, and something to keep in mind on where to place your grate probe.
The 22" does use more fuel for sure, but I changd out the vent door to a stainless steel one and noticed an immediate improvement in fuel efficiency. The one packer brisket I did after the change only took one large bag of Kingsford. Prior to the change, I had to add lit coals to the fire about 10 hours into the cook. I also added a second grate to the fire area, putting the grates perpendicular to each other, which helps.

18" WSM will fulfill most if not all of your smoking needs. The ability to dial in the temp is very easy, and as stated, the Virtual Weber Bulletin Board is a great resource. Minion method will be your friend and will make overnight cooks a breeze!

That's probably where I read about those mods. There or the T-Roy Cooks YouTube channel, which I highly recommend.
I never saw the point of changing out the dome thermometer. I just use a grate probe to monitor the cooking temps.

I've found both on FB marketplace in my area. Lot more kettles than WSM's though.
I guess another question would be doing chicken wings. It makes way more sense to do these on the kettle right? Wsm would be absolute overkill for this I'm figuring.
And I saw about the extra grate idea. That makes sense to me as well.

Wings are better off the kettle because you can sear them to finish them and get the skins good and crispy. I've thrown some on the WSM when I'm smoking something else, then just throw them under the oven broiler to crisp them up. I've never fired up the WSM just for wings.
Some people just take the water pan out of the WSM when they do chicken. That will get the skin crispy, but I've never tried it.

Weber Smokey Mountain. Best smoker for the money ever. I’ve had mine 10 years, still smoking.

I’d recommend either a pit barrel cooker or a Weber smoky mountain. Both are simple to use and make great food. The Weber kettle will work though, and your best under 300 set up. Good luck
