Skin On or Skin Off?

What is y'all's preference for smoking a turkey? I took the skin off one year and swear the smoke penetrated all the way through the turkey.

On, to protect the meat, although my smoked turkey's skins never achieve that desirable crispy status like a bbq does. I'll report back because I'm smoking tomorrow.

Do you dry brine with baking powder as an additive?

I uncovered mine today after two days wrapped and brined with salt/BP. Wife saw it and said "are you going to brine the turkey?" I told her it had been brining for two days and her response was "oh, well it looks really dry."

I told her not to worry and asked her where she thinks all those juices are right now. Then gave her one of these

Seriously, I put a generous coating on it Monday and I only see the baking powder now. I can't wait to cook this bad boy.

What other seasoning should go on top? Thinking just pepper, garlic and onion powder.

Also, would applying a thin layer of olive oil to help the seasoning stick counter the crisping power of the baking powder?

shite, I keep saying baking soda. I promise I used baking powder.

I save the skins from fried chicken to eat last because they're so good. I wish they sold those things like pork rinds.
