Jambalaya doesn’t need a side. A salad as a starter is good.

Your best collards recipe. And an avacado salad. My California visitors always are amazed at what great Avocados Louisiana has that they can’t get in California. It’s like the gulf shrimp they get in the NE. Generally a lot bigger than we get in LA. I guess the prime stuff goes where it’s not that plentiful.

I also usually go with jambalaya by itself. Side/starter salad could work. If I had to go with an actual side I'd go green beans over white beans. I like my white beans on rice as a whole meal on their own.
Tomato cucumber salad might work as another side option. Never done the two together but it seems like it would work

Sugar Snap Peas
Butter Beans
Coleslaw, but just shred your cabbage really fine and season with a lil Cajun Seasoning, olive oil and vinegar

I love me some maque choux. Never thought about doing it with jambalaya. It's a good idea especially for the cali folks op is planning to entertain as they probably have never tasted, heard of, or know how to pronounce/spell it. Would make a nice discussion piece to boot.

OK.. Not trying to hijack a thread but a charity I am affiliated with was donated a pallet of #10 blue runner Creole Cream Style Navy Beans-Original...
How is the best way to serve them? Our meals usually have protein so we were thinking about adding either sausage or smoked chicken to them. But we dont want yall making fun of us-we are from Alabama and know nothing about creole food.
Is it ok to serve with meat and is there anything else we need to add to them?
My organization is heretoserveinc.org. We provide free meals to disaster locations, which lately has been in LA. Last year we went to Deridder, Lake Charles, and Prairieville. We usually serve between 6000-7000 meals a week. Which is pretty good considering there are only 5 of us.
We want to use the donation but want it to be something that people will like. We smoke most of our meats and have avoided creole or Cajun meals because we dont know what we are doing.
Any advice will be greatly appreciated.

I'm not familiar with those in particular, but I'm not sure if there exist any beans that wouldn't at worst be OK with some cut up sausage in them, as long as the sausage is decent. I appreciate you trying to put out a good product, but I don't think the kind of folk you're serving it to are going to give you anything worse than some good natured ribbing.
For most beans, légumes things of the sort I usually cut sausage into medallions and brown them, but the browning isn't explicitly required. I just find it adds flavor and sometimes the fond on the pan from the browning is needed for the recipe. Not really the case with beans and not something I'd worry about with the volume you're looking to put out. Also smoked chicken plus beans on the side sounds good to me. You can also put the beans on rice which will stretch your meal out further, plus lots of folk (especially in LA) like their beans on rice.
Also also, thanks for what you do. Helping folk in need is a noble endeavor.

They are ready to eat, just heat up. Serve it over rice like red beans and rice. Yes, you can and should add sausage, or any type of meat you’d add to red beans.
Think of them like red beans as far as serving. Serve as an entree or pair with fried chicken, pork chops, fish, etc.

In my world jambalaya was the main course and most often served with creamy white beans.
