You have my attention. What kind of onions are you using? I'm assuming white?

My mom makes a broccoli & cauliflower casserole with tasso & mushroom cream sauce every Thanksgiving that is always a hit. Can't imagine it wouldn't go with yours as well. She usually lines the broccoli down one aisle and makes another aisle for cauliflower that way it's not all jumbled up if people don't like one versus the other.

Cole slaw and corn pudding. It’s what I get with the brisket plate at The Francis.

Baked Mac. Potato salad. I actually like a salad with a vinegar based dressing to cut the fat of the brisket.

When we do either brisket or pulled pork our go-to sides are typically some combination of potato salad, cole slaw, mac n cheese, baked beans, and collard greens.

You could also do a sweet potato souffle.

When we were in Houston a couple of weeks ago we went to Truth BBQ for lunch before flying out. Besides the typical sides they had corn pudding and tater tot casserole that were both amazing. Probably the best thing they had were brussel sprouts that had to have been cooked in the brisket tallow. I would kill for that recipe.

Hard to beat some beans, blue cheese cole slaw, and some pickles and pickled red onion as accompaniments.
