School me on reverse sear method

Have six 2" thick ribeyes marinating. I'd like to try this reverse sear, but never done it.

Give a rookie some pointers please

bake on 350 for 30 minutes.

get your skillet as hot as possible.

as soon as your steaks come out of the oven, drop a little butter in the skillet and then drop steaks in the skillet. 5-7 min on each side.

Ouch. I suggest doing what you always do if thats the case.

In the future... Leave ur steak out on the counter an hour or so before u want to cook them. Preheat oven to about 225 degrees and cook the steaks to internal temp. Remove and let rest while u get ur cast iron skillet or ceramic grill screamin hot... Sear both sides quickly. Eat.

Most important learning items: Dont Marinate, Dry Rub Only Just Before Cooking, & Let Stea Reach Room Temp Before Cooking.

Edit: Saw gas grill. Good.. So ur cast iron skillet on it. If you are cooking 6, hopefully you have more than 1 skillet.

Im n the club of 250 degrees for 30 min before sear tho

350 is way too hot. 275 until internal temp reaches 135. Remove from oven and let rest for 30 minutes. Hot skillet or grill for two to three minutes on each side

i put it on 275 until 110 internal temp. If you grill or skillet is hot enough, it will cook it a little more. That will put it to a perfect rare or medium rare

This, although my oven is usually at 220. Last night I put the meat on the cool side of the grill and added some alder wood to the smoker box above the lit burner. Didn't worry about the grill temp, just made sure it was low enough to cook it slow and put the probe in one of the steaks. Came out great.

I'm gonna smoke some later, then hit them with a sear.

I love that flavor.
