Roux on griddle

I do it all the time. Heat griddle to medium hot. Add 1.5 cups of duck fat, or desired oil. Stir with a very rapid motion pulling all of the oil back away drain. I recommend at least 4 people using both their arms to keep the oil pooled up on the griddle, then have someone else add 1.5-2 cups all purpose flour while the team incorporates it into the oil until it reaches a deep mahogany color. Works well.

He’s not joking. My family and I do the 4 person roux technique on our flat top as well.

I personally use 6 people. Half have wooden spoons and half have whisks. You get the best of both worlds.
