Rouse's Swordfish Steaks

Rouse's has swordfish steaks on sale this weekend. Is it any good? Any recipe recommendations?

Season both sides and grill until about medium. It’s a firm fish, and also very high in mercury, but the occasional swordfish steak won’t hurt you.

Top with a fruit salsa would be my go-to

Keep it simple and like most any salt water fish, undercooking is better than over cooking. I always grill mine over low heat and charcoal. Swordfish is fantastic but like the previous poster said, you don't want to eat it too often.

Rub olive oil then season
Place on grill

It's probably the easiest fish to grill after redfish

Swordfish should like tuna, but white not red. In other words when fresh it should be opaque, wet looking (not dried out), and the grains should be together and not pulling apart. If none of the above it may be old and taste fishy.

Fresh swordfish grilled over a hot charcoal with light S&P is one of my favorite fish to eat. Its taste is somewhere between a Beef Filet and Tuna when fresh, imo.

I want to like swordfish but I’ve seen too many worms picked out of them during prep for my taste.

swordfish is awesome. cook it like a steak or tuna. hard sear and leave middle a little under. salt pepper and lemon juice to finish is all you need.

Where did you see worms? I've never caught a swordfish, but I've bought it a bunch of times and never had worms. Did you work for a seafood company in the past or something?

I have some chef friends that I’ve watched clean fish. Not a huge deal but a visual that’s hard to shake

Speckled trout have a shite ton of worms. However, they melt when deep frying in hot grease. Not sure I’d eat a fish rare or med rare if a bunch of worms in the meat.

Then again, maybe I have and just didn’t know.
