Rouses cheap chicken quarters

they have 10# chicken quarters for .37/lb 10 lb bags. The add says limit 4 like last time so yesterday I got 4 bags they were hard as a rock so they have been thawing. I am fixing to seperate the legs and thighs clean em up and put them in qt bags and refreeze. What with the inflation already being felt by us po folk this is a great deal one qt bag is supper and lunch the next day usually and very reasonable

And don't forget to take the pieces of the back you cut off the thighs and use them to make a couple gallons of chicken stock.
I bought 2 bags a couple days ago, let them thaw enough to cut and trim up before bagging the meat and used the trimmings to make a gallon of what is going to basically be an aspic. I let that cook down for 12 hours along with garlic, onion, celery, carrots, bay leaves, a bit or Worcestershire sauce, salt and pepper.
When strained and cooled in the fridge overnight it will form a congealed fat layer I remove and discard and under that will be what is basically chicken jello as it will congeal and not be a viscous liquid. Kind of like stock on crack.

chicken is the only protein where the best parts are also the cheapest. 4 bucks for 10 pounds

Well, they probably figure they have to throw the pubic a bone since they rape us on chicken wings.
The last time my wife wanted some wings it was something like $3.50 a lb. for the damn things-----which is outrageous for what they are.
Damn "Buffalo Wing" craze driving the price to stupid levels.

And if I'm making chicken & dumplings, I'm using the hardened skimmed off chicken fat as my lard to make my dumplings instead of Crisco or some other lard.
I will usually discard the congealed fat cap since I make lots of chicken stocks over the year, but will save some in a mason jar in my fridge to use when making chicken and dumplings.

I looked at wings a few weeks ago and I just laughed.. it almost doubled in price.. but that was at Winn Dick-me..
I know it's been happening for a while but brisket is another one.. It use to be for the po folk but some fancy chef gave up the secret of one of the best BBQ meats..

I just bought 4 quarters at Food Town here in Texas for .70 cents/lb. For $6, I will get 4 solid meals out of this deal.

.37/lb at Walmart in Houston. I sprinkle with Tony's and Willingham's spicy. Cover in the fridge for 2 days, grill for 10 min. per side, put back in the aluminum pan covered.
Put in the oven at 270 for 4.5 hours. eat twice and the rest goes into the gumbo bag. Very tender. Hard to screw up dark meat.

I put some frozen bone-in thighs in the crock pot a couple of weeks ago. Basically a slow boil, removed, de-boned, shredded and added to a gnocchi dinner kit from Sam’s. Damn it was delicious! I’ve never met a thigh I didn’t like.
