Rice/Water ratio for Jambalaya

I use 10 cups of medium grain with like 12 cups water/stock.
Yesterday I tried adding a can of cream of chicken. I used 9.5 cups of rice with 15 cups of water plus the cream. The rice was very slightly still crunchy. I’m assuming the cream holds the rice back from absorbing the water properly.
For you guys that use a cream, how in the hell do you do it? I didn’t notice any difference so I’m not gonna use a cream.

Any kind of creamy stuff goes much better with pastalaya . Jambalaya just doesn’t seem like a good fit for that.

Yeah I use it for pastalaya. I just see people use it for jambalaya and wondering how they get it to come out good with the rice perfect.

I've always used a 2:1 water to rice ratio. Works every time. Don't forget to get your rice to a roiling boil before lowering heat and covering.

Do you use medium or long grain? That makes a difference.

Yeah, typically long grain 2:1 and medium 1:1
I like mine on the moist side so I add a couple extra cups of liquid.
When you put your rice in, do you push it around a couple times and leave it to come back to a boil, or do you kinda mix it around longer until it soaks up most of the liquid?
I’ve seen people do both. I just give it a good mix then leave it alone. Let it come back to a boil, turn Fire all the way down and cover for 20 minutes. Flip it then turn Fire off and let sit for a bit longer.

JFC… people act like jambalaya is this huge mystifying Pandora’s Box.
It’s really fricking easy: twice as much liquid as rice. Boil off the water until level with pot contents, lower as low as possible and cover. Don’t open for at least 20 minutes… longer if a bigger pot. That’s it.
And medium grain… period. Long grain Mahatma means you’re not a cook. Don’t even get me started on par-boiled (zatarain’s) rice.

You must use cream of XXX soup in etouffe as well.

For a large batch of jambalaya I usually go closer to 2:1
