Yeah, I just blanch it and roast it on a baking steel.

Ive seen about three or four different versions of his recipe published. All purport to be from him, hadn't seen the sous vide version.

Got it from a video starring Chef.

Youre pretty retarded if you pay $18 for cauliflower.

I'm not disputing your claim, but I don't think it's because I've paid 18 bucks for their cauliflower. I've done it twice with no regrets. That and a pizza is a hell of a meal for two..

The NOLA.com article has a video from Alon showing it with sous vide and a recipe from him via Food and Wine, poaching it.

I'll continue poaching it and leave the sous vide for Scott Boswell.

Your loss. Pizza Domenica, which is at best peripheral to Besh's empire, is given its culinary direction by Alon Shaya. It's a casual pizzeria, except the ingredients are a cut above the usual pizzeria (including Reginelli's). Plus, all the pizzas are half price from 2-5 pm every damn day. Skip it out of some anti-besh fervor and you're the one missing out.

Garlic knots & smoked provolone fonduta could be part of my last meal.

Its kind of like saying "I wont go to x restaurant because I dont like the bank that gave them the loan."

I've always said Domenica is Alon Shaya's restaurant that happens to have Besh as a partner. I am not a Besh hater in the slightest, but those restaurants are Alon's. Its his food, his sweat, his training, etc...

And I'm eagerly awaiting his Israeli place.

No clue. I've never thought Luke was as great as it could be, but August and Domenica are fantastic restaurants.

Guy hears about top 3 pizzeria in the state, then chooses to eat at one that isn't in the top 15. Congrats!!

On that note, Reginelli's isn't exactly terrible. It's just sort of good-ordinary. I wouldn't go out of my way to eat there.

Agree. Reginelli's is fine. I don't seek it out though.

And from all of the New Orleans pizza talk on this board, it definitely isn't what I would choose.
