Look for a place that does blackened chicken, or a plate lunch place that has smothered chicken or chicken fricassee, or meatball stew or smothered steak.

A Chicken Sauce Piquante as good as mine would work. Ive never seen that dish in a restaurant though.

Dempsey's does smothered chicken as the special on Thursdays if you happen to be going tomorrow, OP.
I like to take people from out of town to Chimes. Is he asking for Louisiana food specifically while not being a pork/seafood eater? Or were you just hopeful to show him Louisiana food? Because if it is the latter, I'd just take him somewhere with a good BR/Louisiana vibe and let him get something else. Chimes has plenty non-seafood or pork options.
Fried green tomatoes are very Louisiana and not pork/seafood. Roux 61 has a fried green tomato app, although the cream sauce is bacon so that might be an issue.

Why not take him to Walk On's? It's a good, upbeat place for lunch and your boss will likely be comfortable with your fellow diners and the price point.

I thought about that and nosed around a bit, but unsuccessfully. Grillades and grits was as close as I could get to something truly Louisiana/New Orleans like. The other smothered dish suggestions are good ones.
I'd also seen a fried green tomato dish, but again, the sauce had tasso or pork in it. A fried green tomato poboy sans the bacon was a thought.

If lunch, maybe some BBQ like Smoking Aces. The chicken and brisket are good and right in the middle of your price range.
