Well, he won the second round, too!



I don't have a description of this dish, but it looks pretty good.

He describes the next round this way:

Second part the other contestants get to decide and give me a 'hurdle' - So they decided I ALSO have to incorporate Pickled Herring into my dish.
So, how would you incorporate beets and pickled herring in a competition dish?

That’s awesome, congrats!!

I cannot stand beats so I am of no help. With that said paging bigdropper since he just did some sort of beef dish in a food challenge.

Glad he didn’t enter our sandwich competition!

I have no idea on the beets and pickled herring.

I have never had pickled herring, but it sounds like a huge challenge to me.

Me either...doesn’t sound too tasty to me either. So I’d say it will go great with beats

This salad is commonly known in Russia as a 'Herring under the Winter Coat Salad.' It is a must for every Russian holiday, however, you have to have a taste for herring and beets. An initial search for pickled herring brought up this Pickled Herring with Onions in Cream Sauce which sounds interesting.

After seeing that and the Russian beet herring salad that TimeOutdoors posted, I'd think about some sort of dip made out of pickled herring, onion, cream/mayo, boiled egg and then some beet chips for dipping. You could possibly play around with a little smoke somewhere in there but that may be too much with all of those flavors.

Congrats to your nephew!

As far as the other part of the post, I’m not gonna be much help. Maybe use the beets as some sort of veggie burger? The herring could be part of a relish. I’m really out of my comfort zone making suggestions but really just wanted to congratulate your nephew and I’m looking forward to seeing his next winning dish.

That’s really nice. He probably could have come close to a medal in Darla’s sandwich challenge.

Turn the beets into beet chips dusted with a pastrami spice seasoning and use the picked herring in a dip. If you need to get crazy with the presentation, use very large beets and mold the slices into cup shapes to hold small scoops of the dip. Fresh dill garnish.

I don't know much about herring, but I wonder if you could do a crab cake knockoff with some sort of beet hollandaise maybe?

That would kind of be elevated and good for a cooking competition with beets vibrant red. Could make for a great contrast on a plate
